Hasiba, hummus paradise

With Hasiba, Israel, Morocco and most of the Middle-East set up home in the Californian megalopolis.

A passion project for two lovers of Middle Eastern cuisine, Hasiba is a hummusiya, a typically Israeli restaurant where they serve hummus. The neighbourhood lunchroom serves kosher dishes in a casual atmosphere. The menu is simple: three selections of hummus and pita bread and two shakshuka ones (traditional Israeli tomato and egg-based dish). According to your taste, pair them with local salad, homemade pickles, aioli fries or a cauliflower gratin. Hummus is traditionally handmade. Speciality hummuses are also worth a try, including one with mushrooms and chermoula (a North African sauce usually served with fish, vegetables or poultry). At Hasiba, you will also find shakshuka variations, made with potatoes, chili and jalapeños peppers. These Israeli dishes will be best paired with Turkish coffee or fresh mint green tea.
